Mushroom Varieties
White Mushrooms

(Agaricus)
(Agaricus bisporus)

DESCRIPTION / FLAVOR:

Varies in color from creamy white to light brown and in sizes from 3/4" to 3" in diameter
Pleasingly mild and woodsy; flavor intensifies when cooked.  In the US Whites are commonly harvested before they mature so the veils do not open underneath the cap.  These mushrooms have a more delicate flavor then the mature mushrooms.  When the mushroom matures the veil will open or separate under the cap.  Mature Whites, with open veils and darkened caps, develop a richer, deeper taste.

SHELF LIFE:

Try to use fresh mushrooms within a couple of days from purchase.  White mushrooms remain fresh 5-7 days. Keep refrigerated in paper bags.
