Handling

Mushrooms do not like to be peeled or scrubbed. The “skin” is delicate and flavorful. When you need to remove extra moisture from chopped mushrooms, place in a clean kitchen towel and gently twist. If you come across a tough stem, best thing is to simply cut it off. Mushrooms absorb water easily, so be careful to not soak them.
