Many folks are surprised to learn that there are a variety of mushrooms, especially if their relationship has only been with those in a can.

Button: Probably the most popular among foodies, button mushrooms are known for being juicy and tasty, inexpensive and with a flavor that’s only mildly mushroomy.
Baby Bella and Portabella: Also known as “browns”, the baby bellas are simply portabellas that are harvested before they are completely mature. Ports are recognizable by their large caps and when cooked, their texture is meaty yet buttery. Many say a grilled portabella mushrooms tastes a lot like a steak!
Oyster: These mushrooms have a mild, seafood taste, hence the name.
Shiitake: Earthy and piney, shiitakes have a low water content so the flavor is concentrated. Very versatile, shiitake mushrooms go with everything, from seafood to vegetables to red meat.
