30 Min or LESS Mushroom Monday: Tortellini & Veggies

We don't know about you, but all this rain has us in the o-so-not productive mood... Cuddling up with a good book is sounding much better! Tortellini with Veggie Sauce

Serves 4-6

Ingredients:

  • 12 ounces tortellini of choice

  • 2 teaspoons olive oil

  • 2 cups chopped zucchini

  • 8 ounces baby bella mushroom (thinly sliced)

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon black pepper

  • 1 cup packed fresh chopped spinach

  • 24 ounces no-salt marinara sauce

Instructions:

  1. Cook tortellini according to package directions. Set aside.

  2. In a large non-stick pan, add oil and sauté zucchini for 6-8 minutes or until golden brown and tender. Set aside.

  3. In same skillet, add in mushrooms, salt, and pepper. Sauté for 8 minutes or until browned and tender.

  4. Add cooked vegetables, chopped spinach, and marinara to tortellini. Gently fold in to combine. Heat on low until warmed.
