Shiitake

(Agaricus bisporus) 

 Earthy and piney, shitakes have a low water content so the flavor is concentrated. They range in color from tan to dark brown with broad, umbrella-shaped caps, wide open veils and tan gills. The caps have a soft, spongy texture. Very versatile, shiitake mushrooms go with everything, from seafood to vegetables to red meat. When cooked, they're rich and woodsy.
