SOUTHWEST PORT BURGERS

It's backyard BBQ time! Call up some friends and invite them over for some flavorsome Southwest Portabella Burgers.  Portabella mushrooms are a healthier alternative to the beef burger.  Lower in carbs and known for their meaty texture, portabellas are guaranteed not to disappoint! If you are ready to sink your teeth into this juicy portabella burger let's jump in. 

INGREDIENTS

  • 2 Portabello Mushrooms

  • Lettuce

  • Tomatoes

  • 1/2 Cup Cheese (Any kind- we used Habanero Jack)

  • Kaiser Buns

 

For Marinade:

  • 1/3-Cup Olive Oil

  • 1/8-Cup Worcestershire Sauce

  • 1/8-Cup Soy Sauce

  • 3 Cloves of Garlic - Finely Chopped

  • 1/4 Tsp. Onion Powder

  • 1/4 Tsp. Salt

  • 1/4 Tsp. Pepper

Avocado Spread:

  • 1 Large Avocado

  • 2 Tbsp. Lime Juice

  • 1/4 Tsp. Garlic Salt

  • 1/4 Tsp. Onion Powder

  • Salt & Pepper to taste

DIRECTIONS

STEP #1

Poke holes on bottom side of portabella mushrooms; marinate mushrooms for 1-2 hours in fridge.

STEP #2

When ready, preheat oven to 375, bake marinated mushrooms, gill side down, for 10 minutes.

STEP #3

Remove ports from oven, flip mushrooms over and add cheese - bake for another 5-10 minutes, until cheese is bubbly.

STEP #4

While the mushrooms are baking, mix together all the ingredients for your avocado spread. We used an immersion blender for ours, but you may use a food processor, or whatever tools you may have!

STEP #5

After cheese has melted to your liking, remove port burgers from the oven. Place your deliciously cheesy portabella burger, avocado spread, lettuce, tomatoes, (and whatever else your heart desires) onto your Kaiser bun.

STEP #6

Ready to serve! Enjoy.
